Family Owned

In 2012, Dave Galton, professor emeritus of Cornell University, began supplying Old Chatham Creamery with sheep milk. Dave taught dairy science for over 33 years; his extensive engagement with undergraduates and dairy farms on both a national and international level gave him the experience needed to tackle the rather difficult task of sheep and goat farming.

 

In the Fall of 2014, after expressing immense interest in the artisanal work of the creamery, Dave and his wife Sally acquired the operation and never looked back.

Award-Winning Dairy Products

All of our products are made with all-natural, certified non-GMO sheep, goat, and cow milk, and made with the uttermost attention to detail. Of 1,742 total entrees in 2019, the American Cheese Society awarded best in show to Murray’s ‘Stockinghall Cheddar’, and second best in show to Wegmans ‘Professor’s Brie’. We also won 1st in six different categories and 2nd in two more. Old Chatham Creamery was the cheesemaker and yogurt maker for all of these award winners. With our state-of-the-art, family-owned and operated dairy and creamery facilities we are able to dedicate ourselves to creating cheeses and yogurts of award-winning caliber.

Teamwork Makes the Dream Work

We set up our newly built state of the art creamery just minutes away from both our family-owned sheep and goat dairy and cow dairy. Our sheep and goat farm has some of the most advanced goat and sheep milking and monitoring equipment, with around 25% of the total milking sheep population in the country (over 2,100!). All of our animals are fed with a high quality combination of locally sourced hay and grains, because local is better.

With a team of 30 team members and quickly growing, Old Chatham Creamery has 4 lead cheesemakers, some with international cheesemaking experience, 2 head yogurt makers, and many other amazing team members that make our products come to life.
